AudioSharp is a very simple and lightweight, open source audio recording application.
It can record content from your mic port, for example, and save it as WAV or MP3. You can have it sit in the system tray out of the way and start / stop / pause recording directly from the tray.
It's a very useful recording tool if you just want a minimal interface and recording functions. Highly recommended!
